Preheat oven to 350.
Cream together:
2 cups sugar
2 eggs
1 Tbsp vanilla
1/2 cup oil
1/2 apple sauce (I changed this to make it slightly healthier; original recipe had 1 cup oil)
3 cups flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
3 cups apple - peeled, cored and diced
Top with brown sugar
Bake for 18-22 minutes
